Durian opener

Durian Opener

I still remember the days when I have to open nearly up to a hundred of durian by myself a day for my research. It was really not an easy job and I was lucky that I was trained from small to do it. Otherwise I will not be able to survive the process. Back then, even my dad do not know how to open a durian. I remember seeing him opening a durian using a huge knife which my mum use in her kitchen when I was small. He tried many ways and at last gave up the '' normal way'' of opening the durian but instead, chopped open the fruit horizontally! Yes you hear me right, it is' horizontally', whereby we have to dig out the durian 'biji' pieces by pieces to enjoy the fruit eventually!

Recently I have found a brilliant durian opener for sale in the market. The creation allow one to open a fruit so effortlessly that I wish  it was created before my time doing the durian research avoiding my fingers being thorned opening so many fruit a day!

Durian opener, a brilliant creation

October 2010 My Visit to Sarawak

I was on a business trip to Sarawak in October and have found many good food over there during this trip. We have had good dinner in one of the seafood restaurant there and visited many kek lapis Sarawak (Sarawak Layer Cake) stores during this trip.

Me holdings a "Mee Siput" (coiled noodles) dried under the sun. Many noodles manufacturers produce noodles in their own backyard and dried under the sun at roadside.

Try the sugar cane drink with lemon. It was famous over here. The fried oyster was never the same style with those from Penang but it was delicious as well.

Sarawak's favourite noodles.

Taking "Belacan bee hoon" (rice noodles with belacan). I have never tried noodles like this in my life. It's has got very strong "belacan" taste.

Hilton Sarawak, a nice hotel to stay in.

We went to visit the village famous of cake lapis Sarawak. It was full of kek lapis stores. This village was just across the river from Hilton hotel.

Unlike those kek lapis from Bandung Indonesia, Sarawak's layer cake is famous due to its colorful and creative design.

Layer cake "imprint" with "SELAMAT DATANG" (Welcome) note. The shop has created it to display their skillfullness in designing the cake.

It only cost us 50cent RM to take a boat across the river. It was busylifestyle, modern buildings and skyscraper on one side while tranquil atmosphere and laid back villages along the other side of the river. This was how special Sarawak was!

Welcome to SARAWAK, welcome to Malaysia! :)

It's Durian Season Again

Relay for Life 31st May - 1st June 2008

这天大马癌症协会在BukitJalil的MSN Training Stadium举办了Relay for Life 活动。

Durian season May 2008

It is durian season again. I have not taken any durian ever since I finished my research on durian last year. This year, I took a day leave during weekend to go back Penang and happened to be invited by my cousin to taste some of the durian varieties in the orchard that he had 'pajak'. The orchard was situated at Balik Pulau. My brother drove me all the way to the orchard. The place was quite secluded and only the local people would have visited that place.

This is the place where they gather all the durians collected to be cleaned, divided based on variety and weighed before sending to the market.

Durians were covered by dried leaves and soil when they were collected.

My cousin Ah Thiam and his uncle were busy checking on the fruits collected.

These were among a few varieties that have fallen on that day which my cousin and his uncle recommended. All of them have a very sticky texture and different aroma.

1. No 15 (十五号) 2. Green Skin (青皮)

3. Kun Bao Hung(坤保红) 4.Green Skin No. 15 (青皮15号)

5. Ling Feng Jiao (林风娇) 6. False Ling Feng Jiao(假林风娇)

7. Kapilin(卡比林)

My brother is packing some durian back. Many people who don't know how to open a durian or feel troublesome to open the fruit will bring along a container to the fruit stall or orchard to purchase the dehusked fruit.

FHA 2008, Singapore

This year, 2008, FHA (Asia's largest International Food and Hospitality Event) was held in Singapore Expo. We were too lucky to have a boss who always think that his team should always get some exposure to stay creative. He allowed 5 of us to visit the expo! I really thank God to have this good boss. Hehehe..... To save cost, we offer to take a train instead of flight, and 5 persons squeezing into two rooms.

It has been a long time since I never take a train, especially the night train with bed. We took a 9.15pm train from KL central and reached Singapore on 8.30am. The beds were clean and I would say nothing much to be complained of except the lady in the next bed chatting on her phone loudly late at night trying to sell insurance I guess... It was really annoying! One of my friends who was awaken by her loud voice tried to indicate her to stop talking by making SHHHH sound a few times but in vain. She kept on talking like what the advertisement shown before the movie started in a cinema which says "many people looking at me but I don't care... wa TAIKO ma...."!

We checked in our luggage at Peninsular Excelsior Hotel and went to the expo straight away. The receptionist had made a mistake on our booking. Instead of booking two rooms, they only reserve one for us. At the end, they offer us one room in Peninsular tower and the other in Excelsior tower! .....

There were all together 7 halls of exhibition and it tooks us 2 days to finished visiting only most of the booths skipping the booths exhibiting wine and hall no 4 which exhibited utensils for hotels. My friend and I have the same thought that we might broke people's plates or glasses if we visit hall no 4 by carrying around the huge paper bag given! Ha ha!

The 1st Barista Championship. BT and I manage to catch-up John's (one of the participants') performance.

Ice cream! I have fallen in love with the Pistachio ice cream during this visit! Walnut ice cream was nice too but still could not beat Pistachio!

These chefs were so professional, both in term of cooking and promoting their products!

Picture shows one of the swimming pool in Peninsular Excelsior Hotel, Singapore. I wonder there is anyone who would like to swim in this "aquarium swimming pool"! The swimming pool is situated next to the lobby lounge, and it's transparent! Swimming in it would make me feel like giving a free show to the hotel guests sitting in the lobby lounge. What a "sexy" swimming pool.

The beauty of Singapore.

The night scene was eye-capturing.

My colleagues and I. The only photo taken with all 5 of us was the one with our shoes (on top). Ha ha...

Weight Loss at a Price

Weight management is extremely difficult. Almost everyone with overweight problems wants a quick solution. Recently, one of my friends has asked me regarding the effectiveness of low carbohydrate diets for losing weight and how does it works. I could not answer him at that time as I have totally no idea about it. Not long ago, I have come across an article discussing low carbohydrate diets written by Dr Margaret Ann Bock from New Maxico State University. It was a good article discussing in detail how does low carbohydrate diets work in helping people reducing weight and what are the important consideration that we should know before starting a diet plan like that. The following were their detrimental effects on health summarize from that article:

Following a dietary regimen which is high in protein, moderate to high in fat and low in carbohydrates may result in a variety of physiological responses:

1. Our kidneys have to work harder to excrete nitrogen from protein, converting nitrogen to urea and eliminating it through urinary.

2. Some of the nitrogen removed from amino acids result in formation of uric acid, a compound that certain people do not properly metabolize. As a result, uric acid may be deposited in the joints as crystals that can stimulate the inflammatory condition known as gout.

3. Excessive acetyl CoA was formed from the breakdown of fat or protein for energy use. One of the alternative paths for utilization of acetyl CoA is in the synthesis of cholesterol.

4. Ketosis or acidosis caused by breakdown of high levels of fat and protein require urinary elimination of those byproducts, further stressing the kidneys.

5. In serious case, skeletal muscle and other body protein may be broken down to meet glucose need, resulting in loss of lean body mass.

6. Ketosis may damage LDL cholesterol, making it more likely to adhere to artery walls and thus, increase the risk of atherosclerosis.

7. Over time, atherosclerosis increases the risk of hypertension (high blood pressure), which in turn, increases the potential for stroke and negatively affects the work of the heart.

8. Narrowing of the blood vessels cause by atherosclerosis increases the possibility of blood clot formation, which can lead to heart attack or stroke.

9. Chronic acidosis may have a detrimental effect on bone health in that it may lead to osteomalacia (softening of the bones) or rickets.

10. Chronic acidosis may also cause growth failure in children and nephrocalcinosis (calcium deposits in the kidney) or nephrolithiasis (kidney stones).

So what do you think after reading this? I don’t mean to scare you but perhaps, we should think twice before adopting a ‘low carbohydrate, high protein, and moderate fat’ diet for losing weight. Good luck for your slimming program my friend!
